Snickerdoodles =)

Ok. So I've been on the search for an amazing Snickerdoodle recipe and I found one!!! OH WOW! These are scrumptious. A little crispy on the outside (not hard) and gooey on the inside.

2 3/4 c flour
1 tsp baking soda
1/2 salt
1/2 shortening
8 TB (1 stick) unsalted butter, softened. You can use salted. It turned out fine for me
1 1/2 c sugar, plus 3 TBS
2 large eggs
1 T ground cinnamon

Preheat oven to 350 degrees. Sift flour, baking soda, and salt into a bowl. With a handheld or standing mixer, beat together the shortening and butter. Add the 1 1/2 cups sugar and continue beating until light and fluffy, about 5 mins. Add eggs 1 at a time, beating well after each addition. Add flour mixture and blend until smooth. Mix 3 TBS sugar with the cinnamon in a small bowl. Flatten the balls into 1/2 inch thick disks spacing them evenly on cookie sheet. Bake until light brown, but still moist in center. The recipe says 12 mins but I baked mine for 8-10 mins. Also add a teaspoon of vanilla and they are to die for!!
